Very basic, very tasty veggie frittata

Ingredients

  • 2 eggs

  • 1 egg white

  • handful of spinach

  • handful of kale

  • 1 sprig of asparagus

  • 1/2 zucchini

  • 1/2 carrot

  • 3x broccoli florets

  • 3x cauliflower florets

  • 1/4 cup of peas

  • 1/4 leek

  • 3 cherry tomatoes

  • Goats cheese (I love Meredith Dairy)

Method

  1. In a bowl, crack your eggs and then whisk. Add egg white and mix in.

  2. In a pan, heat the oil and then saute leek, if you want, adding some garlic is always a good idea. Cook for a minute.

  3. Add your veggies to the pan and saute (minus the tomatoes spinach and kale). Cook for a couple of minutes.

  4. Add tomatoes and cook for a minute

  5. In a small oven safe dish, add your greens, followed by your veggies and then egg. Sprinkle across goats cheese. You may want to line your dish with baking paper to avoid

  6. Bake (180 degrees) for 30 mins or until cooked thoroughly.

  7. Remove from the oven and enjoy.
