Healthy, delicious, yummy in your tummy cookies.

Ingredients

  • 2 cups almond flour

  • 1/4 cup desiccated coconut

  • 2 Tbsp coconut flour

  • 2 Tbsp hemp seeds

  • Pinch of himalayan sea salt

  • 1 tsp cinnamon

  • 2 eggs

  • 1 tsp vanilla extract

  • 1/4 cup maple syrup

  • 1/3 cup coconut oil

  • 1/4 cup cranberries or raisins

  • 1/4 dark chocolate (i like 95% cacao) chopped

  • 1/2 cup super seed and nut mix (check out the recipe here)

Method

  1. Heat the oven to about 150 degrees

  2. In a large bowl, mix in everything except the cranberries, chocolate, nuts and seeds.

  3. When everything is mixed well and all the little lumps are out, add the cranberries, chocolate, nuts and seeds. Mix well.

  4. Line a large tray with baking paper and then using a tablespoon, place about half a palms worth of mixture onto the tray. Leave space in between each cookie.

  5. Bake for about 25-28 mins depending on your oven. Check at about the 20 min mark. The perfect cookie will be golden on top.

  6. Once your cookies are ready, remove from the oven and allow to cool.

  7. Eat one whilst it’s nice and warm. It’s one of life’s greatest delights……warm fresh from the oven cookies - delish. Enjoy.
