Curried Sausages

Ingredients

  • 6 x 100% chicken sausages

  • 1 tbsp olive oil

  • 1 large brown onion

  • 3x garlic cloves

  • 2x carrots

  • 1/4 cup of currents

  • 1 cup of peas

  • 1 tbsp GF flour

  • 1 tbsp curry powder

  • 400ml vegetable broth or stock

  • 100g mushrooms chopped

  • 1/2 packet organic spinach

Method

  1. Dice onion, carrots, garlic and chop mushrooms.

  2. Fry sausages until cooked.

  3. Remove sausages from pan and slice lengthwise. Place back in the pan facedown. This makes them crispy and delicious.

  4. Remove from pan and cut into pieces.

  5. In a large pot, add olive oil and then cook onion and garlic until onion is translucent.

  6. Add carrots, mushrooms and curry powder and mix well.

  7. Add flour and stock and stir well.

  8. Add sausages, currents and peas and cook for 20 mins.

  9. Stir through spinach and cook until spinach is wilted.

  10. Add to a bed of cauliflower and broccoli rice
