Slow cooked Shredded Beef Stew

No fuss, melt in your mouth goodness. I serve this bad boy on cauliflower rice to keep it low carb, but feel free to add to some pasta or rice or even some steamed broccoli. Whatever floats your boat. GF sourdough bread with butter also goes down a treat with this recipe. It’s healthy, it tastes good and it will leave you feeling wholesome as anything when you put it on in the morning knowing it will be there waiting for you that night. Wholesome I tell ya. Oh and if you don’t have a slow cooker, I recommend heading to Kmart and picking up this $45 one. I have had mine for years and it’s still going strong.

Ingredients

  • 1kg of lean diced beed

  • 1 cup of bone broth (I use best of the bone healing mushroom)

  • 3 carrots chopped

  • 3 celery sticks chopped

  • 2 cups of field mushrooms chopped

  • Lots of garlic chopped (a minimum of one tablespoon)

  • 1 large onion chopped

  • Olive oil

  • Salt and pepper

  • 1 teaspoon of thyme

  • 1 teaspoon of oregano or mixed hers

  • 2 cans of chopped tomato (low salt and low sugar)

  • 1 tablespoon of tamari sauce

  • Arrowroot flour

Method

  • In a bowl, add your meat and give it a covering of arrowroot flour. You dont want too much just a light covering.

  • Transfer meat to a pan and lightly brown. Don’t over do it.

  • Add all other ingredients into your slow cooker and cook on high for 4-5 hours.

  • Serve with some steamed veggies or pasta or cauliflower roast or even some delicious GF sourdough with butter. YUM! Enjoy.
