Simple and easy bolognese sauce
I use this for quite a few meals in our home. The obvious, with pasta but I also use it for tacos, mexican bowls and on top of cauliflower and broccoli rice.
Ingredients
2tbsp olive oil
500g lean organic mince
1 onion diced
1 tsp salt
1/4 tsp chilli flakes
1 can crushed tomatoes or 400ml passata
2 cups water
1 1/2 tbsp GF soy sauce/tamari
2 tsp balsamic vinegar
2 sprigs of thyme
2 carrots
250-300g of sliced mushrooms
1 zucchini
1 bag of organic spinach leaves
(I will sometimes add beetroot although this isn’t for everyone)
Method
Heat olive oil in large pot, add onion and cook for a min. Add beef mince and cook until mostly brown. Add your veggies and seasoning and mix well for about 2mins. Add your tomato passata/can of toms and water and bring to the boil. Reduce heat and add your thyme. Cook for an hour on low heat.
*The perfect container to store this in is little almond butter jars. I save all of my jars and have found these to be the perfect portion size. They freeze well and make life easy when you want to eat something nourishing but have zero energy. I recommend adding it to Slendier edamame pasta, cauliflower rice or zucchini noodles.
