Fennel Spinach and tuna salad

Ingredients

  • 1/2 fennel bulb sliced finely

  • handful of organic spinach

  • 1/2 avocado

  • 1 tbsp olive oil

  • squeeze of lime/lemon

  • 1 tsp capers (roasted or lightly fried for 5mins)

  • 1 tbsp keto mayo

  • 1 can/tin tuna


Method

Add spinach, fennel, capers and avocado into a bowl.

In a little bowl, combine tuna and mayo and mix well. Transfer to your salad.

Drizzle olive oil and a splash of lime/lemon across your salad.

Mix well and enjoy.
