Metabolic Balance® Easy Red Lentil Curry
I felt like a curry recently so I got creative using my MB ingredients and the result was nothing short of delicious. And it was so so easy to make. The recipe below serves one.
Ingredients
Your allocation of red lentils (or any other pulse on your list)
Your allocation of vegetables. I added leek, broccoli, cauliflower, zucchini and spinach.
1 tsp of your cooking oil (mine is ghee)
1/2 tsp turmeric
1/2 tsp cumin
1/2 tsp ground coriander seeds
400ml of water with vegetable broth I this nutra organics one
Salt and pepper
Method
In a deep pan, add your oil and heat.
Add your vegetables (minus spinach) and sauté for a minute or so.
Add in your lentils and herbs and spices. Mix through.
Add your vegetable broth and cover your pan.
Cook for 15mins or until water has reduced and the curry is at a consistency you like. Stir every 5 or so minutes.
Mix through spinach at the very end and stir until cooked.
Dish up and enjoy. Add salt and pepper if needed.
