Metabolic Balance® Easy Red Lentil Curry

I felt like a curry recently so I got creative using my MB ingredients and the result was nothing short of delicious. And it was so so easy to make. The recipe below serves one.

Ingredients

  • Your allocation of red lentils (or any other pulse on your list)

  • Your allocation of vegetables. I added leek, broccoli, cauliflower, zucchini and spinach.

  • 1 tsp of your cooking oil (mine is ghee)

  • 1/2 tsp turmeric

  • 1/2 tsp cumin

  • 1/2 tsp ground coriander seeds

  • 400ml of water with vegetable broth I this nutra organics one

  • Salt and pepper

Method

  • In a deep pan, add your oil and heat.

  • Add your vegetables (minus spinach) and sauté for a minute or so.

  • Add in your lentils and herbs and spices. Mix through.

  • Add your vegetable broth and cover your pan.

  • Cook for 15mins or until water has reduced and the curry is at a consistency you like. Stir every 5 or so minutes.

  • Mix through spinach at the very end and stir until cooked.

  • Dish up and enjoy. Add salt and pepper if needed.
