Ingredients:
500g boneless, skinless chicken thighs, cut into bite-sized pieces
2 cups chopped vegetables (such as carrots, celery, sweet potatoes)
1 onion, chopped
2 cloves garlic, minced
1 can diced tomatoes
2 cups chicken broth
1 tsp dried thyme
Salt and pepper to taste
