Apple and Strawberry Crumble
This is a twist on an old favourite and it’s so good.
Ingredients
Apple and strawberry filling
3 large green apples
2 cups strawberries - hulled and cut in half
3 tbsp pure maple syrup
1 tsp cinnamon
1 tbsp GF flour
pinch sea salt
1 tsp lemon juice
Crumble
1/2 cup Almond meal
1/2 cup quinoa oats or rolled oats
1/4 cup walnuts chopped
1 tsp nutmeg
1 tsp cinnamon
1 tbsp sweetener like rice malt syrup or maple syrup
1 tsp vanilla extract
3 tbsp coconut oil melted
Directions
Heat your oven to 200 C.
Mix together the apple and strawberries with the rest of the filling ingredients. In a small to medium pie tray, place your apple and strawberry mix and arrange so it’s even.
To make the crumble, heat the coconut oil and then combine the rest of the crumble ingredients and mix together well.
Now place the crumble on top of the delicious apple and strawberry filling. Cook for 10mins before checking. Depending on your oven you might want to cook for another few minutes. The topping should be golden and the fruit bubbling.
This is delicious on it’s own or if you’re in the mood for it, add a dollop of coconut yoghurt or good quality ice-cream.
