Ingredients

  • 4 cups water

  • 1 packet Slendier noodles (konjac/shirataki noodles), drained and rinsed well (if you plan on freezing this, make the noodles fresh each time)

  • 2 cups cooked shredded chicken OR 500g chicken mince

  • 4 cloves garlic

  • 2 inches fresh ginger, peeled

  • 2 stalks scallions (white and green parts)

  • 1-2 jalapeños, stems and seeds removed (adjust for spice preference)

  • 1 packed cup fresh parsley or coriander (plus more for garnish)

  • 1 bag organic spinach

  • 1 tbsp coconut aminos or tamari (soy-free alternative)

  • 1 tbsp fresh lemon or lime juice

  • Sea salt, to taste

  • Olive oil, for drizzling (optional)

Method

1. Prepare the Bone Broth

  • In a large pot, bring 4 cups of water to a gentle boil.

  • Whisk in 2-3 tablespoons of NutraOrganics Chicken Bone Broth Powder until fully dissolved.

  • Reduce heat to a simmer.

2. Wilt the Greens

  • Add spinach to the broth and cook until wilted (about 1-2 minutes).

  • Use a slotted spoon to transfer the greens to a blender and allow them to cool slightly.

3. Make the Herb Puree

  • To the blender with the greens, add:

    • Garlic, ginger, scallions, jalapeño, parsley, and ¼ cup water.

  • Blend until smooth, adding more water if needed.

4. Cook the Chicken

If using shredded chicken:

  • Simply stir the cooked shredded chicken into the broth in the next step.

If using chicken mince:

6. Assemble the Soup

  • Stir in half of the herb puree, taste, then add more as desired.

  • Stir in coconut aminos/tamari and fresh lemon/lime juice.

7. Serve & Garnish

  • Serve hot, topped with extra fresh herbs and a drizzle of olive oil.

  • Add thinly sliced jalapeños for extra heat.
