Pimped Up Porridge with an Antioxidant Kick

This is another morning go to in our home. Why? This enhanced porridge combines key ingredients that actively support health and sustained energy. Very important to help keep both children and adults going throughout the day.

The base of oats contains beta-glucans that actively lower cholesterol and regulate blood sugar levels. They're packed with fiber for digestive health and manganese for bone formation and wound healing. The zinc and phosphorus content supports immune function, while their complex carbohydrates provide steady, sustained energy throughout the morning.

Adding an egg transforms this into a complete protein source, providing all essential amino acids your body needs. The egg's choline supports brain function and cell membrane health, while its lutein and zeaxanthin compounds protect eye health. The healthy fats in eggs slow down carbohydrate absorption, helping maintain steady blood sugar levels and supporting muscle maintenance.

The unsweetened almond milk delivers vitamin E for immune function and skin health. Its low glycemic impact helps control blood sugar, and if fortified, provides calcium for bone health. It hydrates and lightens the porridge without adding dairy.

The organic frozen berries are rich in anthocyanins that fight cell damage. Their high vitamin C content supports immune function and collagen production. Being flash-frozen at peak ripeness preserves their nutrients, and choosing organic means fewer pesticides. Their fiber content further supports gut health.

Together, these ingredients create a balanced meal that provides steady energy release, multiple antioxidants, complete protein, and sustained fullness. The combination helps regulate blood sugar levels while delivering key nutrients your body needs to function optimally. YUMMY YUMMY!

Ingredients

  • 1 serving of oats (this depends on how much you need, I tend to go 1/4 of a cup)

  • Unsweetened almond milk (start with a cup and then just add more as you cook depending on the consistency that you like)

  • 1 egg

  • 1/2 to 1 cup of organic frozen berries

Method

  1. Add milk and oats into a pot and start to heat

  2. After a couple of minutes mix in your egg and keep stirring until its cooked through and mixed beautifully through your oats

  3. Add in frozen berries and cook for another minute or so, until the berries are no longer frozen

  4. Add more milk if needed
