Low Carb Slow Cooked Sausages with Capsicum and Onion
This hearty and flavourful slow-cooked meal is perfect for a nourishing, low-carb meal. High quality sausages are gently simmered in a rich tomato passata with sweetened with capsicum and onion, creating a deliciously simple yet deeply satisfying dish. Paired with steamed greens for added nutrients, it’s an easy, wholesome dinner that fits perfectly into a balanced lifestyle. You can add chilli or if you have a small human at home, just leave it out.
Ingredients
6 high-quality sausages (natural, minimal additives)
1 jar passata (opt for organic, low sugar <5g per 100g)
1 green capsicum, sliced
1 red capsicum, sliced
1 brown onion, sliced
1 teaspoon Italian herbs
Salt and pepper, to taste
Chilli flakes (optional, for a bit of heat)
1 small head of broccoli, cut into florets (for serving)
A handful of spinach (for serving)
Method
Brown the sausages – Heat a pan over medium heat and lightly brown the sausages on all sides. This step adds depth of flavor. Transfer them to the slow cooker.
Prepare the vegetables – Slice the capsicums and onion into thin strips and add them to the slow cooker.
Add the sauce & seasoning – Pour in the passata and sprinkle with Italian herbs, salt, pepper, and chilli flakes if using. Stir gently to coat everything.
Slow cook – Cover and cook on high for 4 hours or low for 6-7 hours, until the sausages are tender and the flavors are well developed.
Prepare the greens – Five minutes before serving, lightly steam the broccoli florets and spinach until just tender.
Serve & enjoy – Arrange the greens in a bowl, top with the sausages and rich tomato sauce, and garnish with fresh parsley if desired.
Serves: 3 people. To extend the dish to serve 4, simply add two extra sausages.
