Slow Cooked All the “Frees” Beef Stew

This slow-cooked beef stew is not only delicious, but it's also gluten-free and dairy-free, making it suitable for those with dietary restrictions. The long cooking time allows the flavours to meld together, resulting in a hearty and comforting dish. Enjoy the tender beef, flavourful vegetables, and aromatic herbs in every spoonful!

Ingredients:

-1kg beef stew meat, cubed

- 1 onion, diced

- 3 garlic cloves, minced

- 4 carrots, sliced

- 3 celery stalks, sliced

- 1 cup gluten-free beef broth

- 1 cup diced tomatoes (canned or fresh)

- 2 tablespoons tomato paste

- 2 teaspoons dried thyme

- 2 teaspoons dried rosemary

- 1 teaspoon paprika

- Salt and pepper to taste

- Fresh parsley, chopped (for garnish)

Instructions:

1. Heat a large skillet over medium-high heat and add a little oil. Brown the beef cubes on all sides until nicely seared. Remove from heat and set aside.

2. In the slow cooker, add the diced onion, minced garlic, sliced carrots, and sliced celery.

3. Place the seared beef cubes on top of the vegetables.

4. In a separate bowl, whisk together the gluten-free beef broth, diced tomatoes, tomato paste, dried thyme, dried rosemary, paprika, salt, and pepper.

5. Pour the mixture over the beef and vegetables in the slow cooker, ensuring everything is well coated.

6. Cover the slow cooker and cook on low heat for 6-8 hours or on high heat for 3-4 hours until the beef is tender.

7. Once cooked, taste and adjust the seasoning if needed.

8. Serve the gluten-free and dairy-free beef stew hot, garnished with fresh parsley.
