Ingredients:
- 1.5 to 2kg beef brisket
- 1 onion, thinly sliced
- 4 garlic cloves, minced
- 1 cup low-sodium gluten-free beef broth
- ¼ cup tamari or gluten-free soy sauce
- 2 tablespoons apple cider vinegar
- 2 tablespoons Dijon mustard
- 1 tablespoon smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- ½ teaspoon black pepper
- ½ teaspoon sea salt
- Fresh parsley, chopped (for garnish)
Instructions:
1. In a small bowl, combine the smoked paprika, onion powder, garlic powder, ground cumin, black pepper, and sea salt. Rub the spice mixture evenly over the beef brisket, covering all sides.
2. Place the sliced onion and minced garlic in the bottom of the slow cooker.
3. In a separate bowl, whisk together the gluten-free beef broth, tamari or gluten-free soy sauce, apple cider vinegar, and Dijon mustard. Pour the mixture over the onions and garlic in the slow cooker.
4. Carefully place the seasoned beef brisket on top of the onion mixture in the slow cooker.
5. Cover the slow cooker and cook on low heat for 8-10 hours or on medium/high heat for 4-6 hours until the brisket is tender and easily shreds with a fork.
6. Once cooked, remove the brisket from the slow cooker and let it rest for a few minutes. Slice or shred the brisket as desired.
7. Serve the gluten-free, sugar-free, and dairy-free beef brisket with the cooking juices from the slow cooker. Garnish with fresh parsley for added freshness and flavor.
