Sauteed greens with crispy salmon and cauliflower mash

Greens

Really you can use whatever greens you like but here are my 'always have in the fridge greens'.

  • 1/4 leek finely sliced

  • 1/2 zucchini sliced

  • 1 broccolini sprig

  • 2 asparagus sprigs

  • handful of spinach

  • handful of kale

Add olive oil or ghee to a pan and heat. Add leek and saute for a couple of mins followed by zucchini, broccoli, kale and asparagus. Saute until cooked and then add your spinach. Saute until spinach is wilted. Season well with salt and pepper.

Salmon

drizzle olive oil over salmon and season with salt and pepper.

Add to air fryer for 7-8 mins

Cauliflower mash

  • 1x pot of boiling water with 1 tsp bone broth added

  • 1/4 cauliflower

Add cauliflower to the boiling water and cook until soft. Drain and then with a stick blender, blend until smooth.

Putting it together

Add your cauliflower mash to a plate, top it with your sauteed greens and then place your crispy salmon on top. Enjoy.
