Slow Cooked All The “Frees” Ribs
These slow-cooked ribs are a delicious and healthy option for a satisfying meal. The combination of savoury flavours and tender meat will leave your taste buds wanting more.
Ingredients
2 racks of beef ribs
4 tablespoons tamari or gluten-free soy sauce
2 tablespoons apple cider vinegar
2 tablespoons tomato paste
1 tablespoon smoked paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon ground cumin
1/2 teaspoon black pepper
1/2 teaspoon sea salt
1 cup gluten-free vegetable broth
Fresh coriander or parsley, chopped (for garnish)
Instructions:
In a small bowl, combine 4 tablespoons of tamari or gluten-free soy sauce, 2 tablespoons of apple cider vinegar, 2 tablespoons of tomato paste, 1 tablespoon of smoked paprika, 1 tablespoon of garlic powder, 1 tablespoon of onion powder, 1 teaspoon of ground cumin, 1/2 teaspoon of black pepper, and 1/2 teaspoon of sea salt. Stir well to create a marinade.
Place the racks of ribs in a large resealable bag or container. Pour the marinade over the ribs, ensuring they are evenly coated. Marinate in the refrigerator for at least 2 hours or overnight for maximum flavor.
Preheat your slow cooker on low heat.
Remove the ribs from the marinade, allowing any excess marinade to drip off. Place the ribs in the slow cooker, stacking them if necessary.
Pour 1 cup of gluten-free vegetable broth into the slow cooker, ensuring it surrounds the ribs.
Cover the slow cooker and cook on low heat for 6-8 hours or on high heat for 3-4 hours until the ribs are tender and juicy.
Once cooked, carefully remove the ribs from the slow cooker and transfer them to a baking sheet lined with foil.
Preheat your oven to a high grill setting.
Brush the ribs with any remaining marinade from the slow cooker.
Place the ribs under the oven grill for a few minutes until the top becomes slightly caramelised and charred.
Remove from the oven and let the ribs rest for a few minutes.
Cut the ribs into individual portions and garnish with fresh coriander or parsley.
Serve with mash (potato or cauliflower) and steamed greens
