My brussel sprouts are delicious recipe

Here is a cruciferous veg recipe that I LOVE and really wanted to share with you all. I can’t remember where I came across it but I have been making it for almost 15 years now.

Now if you're like a lot of people and think you hate brussel sprouts hear me out ok :) This dish is delicious and not at all like the boiled gross ones that often come to mind when we think about brussel sprouts (mum I'm blaming you on that one :P )

Ingredients

  • 1x packet of mini brussel sprouts (if you can only get the regular size ones just cut the in half lengthwise)

  • Good quality hummus

  • 1.5 tbsp honey

  • 2 tbsp good quality dukkah (I will often add more because I love it but start with this)

  • 2 tbsp good quality olive oil

  • Salt and pepper

Method

  1. Cut the bottom off the brussel sprouts and then place in an oven safe dish. Cover in the olive oil and season with salt and pepper. Cook them until they are nice and roasted. About 20mins. See how you go. I like them a little crispy on the outside.

  2. In the meantime, on a plate, spread out some of that yummy hummus and then when the sprouts are ready, place on top of hummus. How much hummus you need really does depend on your own personal preference. I add a few tbsp.

  3. Once you have your hummus and sprouts laid out nicely on a plate, drizzle the honey all over the sprouts and then sprinkle on your dukkah.

  4. This dish is so tasty. You can have it as a side dish or a main. If you do have it as a side dish for a few people, I recommend adding more hummus.
