Flaxseed and Chia Pudding

Ingredients

  • ¼ cup of chia seeds

  • ¼ cup of flaxseeds

  • ¼ cup of desiccated coconut

  • 1-2 cups of almond milk/coconut milk (no added sugar)

  • Scoop of coconut yogurt

Method

Using mortar and pestle, crush your flaxseeds to slightly break them open. Flaxseeds don’t fully break down in your gut, so this will help you to access their healthy fats, antioxidants, fiber and protein and allow you to reap the most nutritional benefit from them.

Once flax seeds have been crushed, add to a small pot along with chia seeds, desiccated coconut and almond milk. On low heat, continue stirring until ingredients start to form a pudding like texture. If you would like to, add more milk until you get the consistency you like. Add to a bowl along with a scoop of coconut yoghurt.

EXTRA TIP: add a little raw honey if you would like it to be sweeter. I also like to add sunflower & pumpkin seeds over the top. Lately I have also been enjoying topping my pudding with blueberries and strawberries for that extra antioxidant goodness.
