Cauliflower & Lentil Curry

Ingredients

  • 1 tsp ground cumin

  • 1 tsp chilli flakes

  • 1 Tbs ground turmeric

  • 1/2 tsp cumin seeds

  • 1 Tbs ground coriander

  • 1/2 tsp garam masala

  • 1 Tbs mustard seeds

  • 20 curry leaves

  • 3/4 cup red lentils

  • 1 tsp ground cumin

  • 1 tsp chilli flakes

  • 1 Tbs ground turmeric

  • 1/2 tsp cumin seeds

  • 1 Tbs ground coriander

 

  • 3/4 cup red lentils

  • 2 Tbs veg stock

  • 600ml boiling water

  • 1 Tbs coconut oil

  • 1/2 cauliflower

  • 3x garlic cloves

  • 1cm fresh ginger

  • 1 brown onion

  • 150g organic spinach

  • 1 lime

  • 1 bunch coriander

Method

  1. mix stock into the boiling water

  2. heat the coconut oil in a large saucepan

  3. add the mustard seeds, cumin seeds, curry leaves and garlic. when mustard seeds start to pop, add onion

  4. add all of the beautiful spices and fry until your kitchen smells fragrant

  5. add the lentils in and stir

  6. slowly start to pour stock into the saucepan . add less or more depending on desired consistency

  7. chop up cauliflower and add to pot

  8. bring to the boil and then cook for 20mins on low heat

  9. 2mins before finishing up, stir in coriander and spinach and add lime.

  10. dish it up, add a few sprigs of coriander and if you really want to go all the way I recommend serving with a dollop of chutney
