Beetroot Salad

Ingredients

  • 5 large beetroots

  • 1 Tbsp coconut oil

  • 1/2 bunch coriander chopped

  • Goats cheese

  • 1/2 bunch of organic spinach

  • Nut mix (see my recipe)

Method

  1. Preheat oven 200 degrees

  2. Peel and cut beetroots and then drizzle olive oil over the top.

  3. Add to a large oven tray and then put in oven. Cook for 20-30 minutes

  4. Combine spinach, coriander, nuts and goats cheese into a large bowl and mix.

  5. When the beets are cooked, let them cool down and then add to the salad

  6. This salad makes a really yummy side. I will often have it with a piece of salmon, grilled chicken or tempeh
