Beetroot Salad
Ingredients
5 large beetroots
1 Tbsp coconut oil
1/2 bunch coriander chopped
Goats cheese
1/2 bunch of organic spinach
Nut mix (see my recipe)
Method
Preheat oven 200 degrees
Peel and cut beetroots and then drizzle olive oil over the top.
Add to a large oven tray and then put in oven. Cook for 20-30 minutes
Combine spinach, coriander, nuts and goats cheese into a large bowl and mix.
When the beets are cooked, let them cool down and then add to the salad
This salad makes a really yummy side. I will often have it with a piece of salmon, grilled chicken or tempeh
